Vanilla Roasted Stone Fruit
Ingredients
2 peaches
4 plums
4 apricots
2 nectarines
1 Beyond Good Madagascar vanilla bean, split, seeds scraped
1 tablespoon light corn syrup
3 tablespoons unsalted butter, melted
Good splash of orange liquor
Instructions
Preheat oven to 400F.
Wash all the fruit, halve or quarter removing the stones.
Place fruit in a single layer cut-side up in a baking pan.
Mix melted butter, light corn syrup, liquor and vanilla seeds together and drizzle with this mixture all the fruit.
Roast about 20 minutes until tender.
Serve warm, adding vanilla yogurt to each portion.
