Vanilla Roasted Stone Fruit

Ingredients

  • 2 peaches

  • 4 plums

  • 4 apricots

  • 2 nectarines

  • 1 Beyond Good Madagascar vanilla bean, split, seeds scraped

  • 1 tablespoon light corn syrup

  • 3 tablespoons unsalted butter, melted

  • Good splash of orange liquor  

Instructions

  • Preheat oven to 400F. 

  • Wash all the fruit, halve or quarter removing the stones.

  • Place fruit in a single layer cut-side up in a baking pan. 

  • Mix melted butter, light corn syrup, liquor and vanilla seeds together and drizzle with this mixture all the fruit. 

  • Roast about 20 minutes until tender.

  • Serve warm, adding vanilla yogurt to each portion.
