Raspberry Chocolate Popsicles

Ingredients

  • Raspberry Purée:

    • 1 cup fresh or frozen raspberries

    • 1 tablespoon maple syrup

  • Popsicles:

    • 3 cups low-fat coconut milk

    • 1 bar Beyond Good 70% Pure Dark Chocolate Bar, chopped

    • ¼ cup cocoa powder

    • ½ teaspoon cinnamon

    • 1 tablespoon arrowroot powder

    • ¼ teaspoon salt

    • ½ cup maple syrup

    • 1 teaspoon Beyond Good Madagascar Vanilla Extract

    • All of the Raspberry Purée

    • 16 fresh raspberries

  • To Decorate (optional):

Instructions

  • Make the Raspberry Purée by adding raspberries and maple syrup to a small saucepan over low heat. Use a wooden spoon or spatula to break the raspberries apart and to release their juices. 

  • Simmer for about 5 minutes and pour the raspberry mixture over a fine-mesh strainer and use a spatula to strain. Discard the seeds.

  • To the same saucepan over medium heat, add the coconut milk and the chopped Beyond Good 70% Pure Dark Chocolate Bar. Whisk until the chocolate is melted and smooth. 

  • In a small bowl, toss the arrowroot powder, cocoa powder, salt, and cinnamon together. Add ¼ cup at a time of the chocolate coconut milk to the bowl and whisk until no more lumps remain.

  • Transfer the mixture to the saucepan and stir in the maple syrup and vanilla extract. Whisk constantly over medium heat for about 5 minutes.

  • Strain the mixture over a fine-mesh strainer to remove any remaining lumps before pouring it into the popsicle molds, leaving about ¼ inch of space below the top.  

  • Add about 1-2 teaspoons of the raspberry filling to each popsicle mold and fold it with a knife. Add 1-2 fresh raspberries on top and dip in the popsicle sticks halfway. Freeze for at least 8 hours.  

  • When you are ready to serve, let the popsicle molds sit at room temperature for a few minutes. Carefully remove the raspberry chocolate popsicles and serve immediately or decorate them. To decorate, dip the popsicles in melted chocolate and sprinkle freeze-dried raspberries on top. Transfer back to the freezer to harden before serving. 

  • Add leftover popsicles to plastic bags and return them to the freezer for up to 3 months.
