Guajillo Vanilla Bean BBQ Sauce

Ingredients

  • 1 medium onion, sliced

  • 3 garlic cloves, sliced

  • 1 tablespoon butter

  • 3 tablespoons sherry vinegar

  • 1/3 Beyond Good Madagascar Vanilla Bean, Scraped

  • 3 ounces brewed coffee

  • 5 ounces water

  • 2 tablespoons tomato paste

  • 1 cup plus 2 tablespoons tomato puree

  • 1/3 cup date syrup

  • 3 gaujillo chilis, deseeded if desired for less heat

  • 2 tablespoons brown sugar

  • 1/4 teaspoon cinnamon

  • 1/8 teaspoon ground clove

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

Instructions

  • In a cast iron skillet, melt the butter

  • Sauté the onion and garlic until soft, making sure they don’t darken

  • Add the sherry vinegar and deglaze the pan

  • Add the seeds of 1/3 of a Beyond Good Madagascar Vanilla Bean pod, coffee, water, tomato paste, tomato puree, date syrup and the guajillo peppers

  • Simmer together for 10 minutes, then pour into a blender and puree

  • Strain back into the skillet, then add the brown sugar, spices, salt and pepper. Let simmer on medium low heat and reduce until thick

  • Taste for sugar and salt and pour into a glass jar. Let cool before using

  • Use on vegetables, tofu, fruit, or anything else that needs some delicious flavor!
