Madagascar-Style Pancake Bites with Chocolate Dipping Sauce

Ingredients
PANCAKES:
1/2 cup all purpose flour
1/4 cup + 2 tbsp brown rice flour
1/2 tsp active dry yeast
1/4 tsp kosher salt
3 tbsp granulated sugar
1 tsp orange zest
3/4 cup full-fat coconut milk
CHOCOLATE DIPPING SAUCE:
1 bar of your favorite Beyond Good Chocolate (we recommend Toasted Coconut, Orange Zest, or Salted Caramel)
1/2 cup heavy cream
1 tsp granulated sugar
1 tbsp unsalted butter
Procedure
PANCAKES
Heat coconut milk until it’s warm to the touch and then combine with the yeast. Let proof for 5 minutes, until yeast is foamy.
In a medium bowl, whisk together all purpose flour, rice flour, and kosher salt. Set aside.
Place sugar and orange zest in a small bowl and use your fingers to rub together until zest is evenly dispersed and fragrant. Add sugar mixture to the bowl with the flours and whisk to combine.
Pour yeast and coconut milk into the dry ingredients, along with the vanilla extract. Whisk until everything is combined and no flour streaks remain. Cover the bowl with plastic wrap and let proof at room temperature for 1.5 hours, until the batter is swollen and bubbly.
To cook the pancakes, heat an ebelskiver pan over medium heat. Place 1/4 tsp coconut oil in each of the cups, then pour in 1.5 tbsp of batter. Cook for 1-2 minutes, until the edges are beginning to dry out and the bottom is golden brown, then use a fork or a chopstick to flip.
Continue cooking for another 1-2minutes until both sides are deeply golden and then remove from the pan.
Serve with Beyond Good Chocolate Dipping Sauce (recipe below).
CHOCOLATE DIPPING SAUCE
Chop chocolate bar and place in small bowl.
Combine heavy cream and sugar in a small saucepan and heat until small bubbles begin to form and cream is hot to the touch. Pour hot cream over the chopped chocolate and let set for 3 minutes.
After 3 minutes, whisk vigorously until the mixture is smooth and glossy and all of the chocolate pieces are melted. Add butter and whisk again until melted. Serve warm with fresh Madagascar-style pancake bites.
