Chocolate Coconut Pineapple Pops
Ingredients
1/2 pineapple
2 bars Beyond Good Toasted Coconut
Toasted shredded coconut
DIRECTIONS
Make 1/2-inch pineapple slices using a large knife. Hollow the core and trim the edges, then cut small triangles. Pick a lollipop stick in each pineapple triangle. Set aside.
Roughly chop the chocolate bar up. In a bowl, melt chocolate in the microwave by 30 seconds increments until smooth.
Coat each triangle halfway with melted chocolate and lay on a baking sheet lined with parchment paper. Sprinkle with toasted shredded coconut. Allow to set in the refrigerator then serve when ready.
